When Lisa Green, as she is known to friends and business associates,
first came to The Edge Connection, Inc. in February 2006, she had
only the idea for an authentic Mexican food restaurant like the ones
she grew up with in California. Over several months, with assistance
from the Edge, she developed a business plan, obtained financing,
signed lease contracts, and incorporated. At the end of the first
quarter of 2007 she was ready to open her taqueria in the Holly
Commons Retail Center in Holly Springs, GA. Ten days later she
opened a second, smaller location that caters to the college crowd
in Waleska, GA.
Lisa’s commitment and willingness to go the extra mile was pivotal
in her success as a business owner. Taking the advice of Carlotta
Roberts, Edge Connection business consultant, Lisa took the time to
do extensive research before opening her business. She used a
research tool provided by Carlotta as her "research blueprint" to
gather critical business data. Since her business is patterned after
a family business in California, she spent a week in California
working in the business. Using her "blueprint", she culled pertinent
data on expenses and revenues. This information was exactly the
empirical data she needed to quantify her decision to open two
stores in Georgia.
Her taquerias are cozy restaurants that offer breakfast burritos,
healthy and inexpensive lunch items, and casual dinners to be eaten
at the restaurant or taken home to enjoy. Her menu features recipes
that have proven successful in her family’s restaurants in Half Moon
Bay, California.
Lisa carefully researched the demographics of central Cherokee
County before choosing a location. A military spouse and mother of
three children, she lives in the community and was aware of the
strong population growth in the area. Her Holly Springs location is
next to three large subdivisions on Hwy 140, providing easy access
to those who drive by every day.
A hard worker with a friendly personality, Lisa is currently fine
tuning her marketing plan with assistance from a student team at
Kennesaw State University. Eventually, she is contemplating more
locations for her restaurant concept.
The Edge salutes Lisa Green and thinks of her as a “woman to watch.”
